Edible Soda Ash, chemically known as Sodium Carbonate with the molecular formula Na₂CO₃, is an inorganic compound. At room temperature, it exists as an odorless, white powdery or granular solid with hygroscopicity. When exposed to air, it will gradually absorb moisture and carbon dioxide to form sodium bicarbonate.

As a food additive, it is widely used in fields such as pasta fermentation, pastry making, food cleaning, and condiment processing.

Working Principle

1. Acid-base Neutralization Reaction: Food-grade sodium carbonate is a type of strong-base weak-acid salt, and its aqueous solution is weakly alkaline (the pH value of a 1% aqueous solution at 25℃ is about 11.5–11.7). It can undergo a neutralization reaction with organic acids produced during food processing (such as lactic acid and acetic acid generated in dough fermentation), yielding salt, water and carbon dioxide.This reaction can eliminate the sour taste caused by organic acids. Meanwhile, the generated carbon dioxide gas can form a porous structure inside pasta and pastries, achieving a fluffy texture effect.

2. Oil Decomposition and Emulsification: In food cleaning scenarios, the alkalinity of food-grade sodium carbonate can trigger a saponification reaction with oils and fats, decomposing them into water-soluble sodium fatty acids and glycerol. At the same time, it also has an emulsifying and dispersing effect, which can disperse oil stain particles in water, thereby removing oil stains on the surface of food.
3. pH Adjustment Effect: In the processing of condiments, beverages and other food products, food-grade sodium carbonate can precisely adjust the pH value of the raw material system, optimizing the taste, color and stability of food. For example, in the soy sauce fermentation process, appropriate addition of food-grade sodium carbonate can adjust the pH of the fermentation environment, promote microbial metabolism, and improve the flavor and quality of soy sauce.
